Me and my experience

I was born in Czechia and grew up in a family that owned a small pub, so you could say I was immersed in the hospitality industry from the very beginning. However, my journey has taken me on a different path than where I started. As soon as I had the opportunity, I moved to Copenhagen to pursue a degree in Hospitality Management. During my studies, I had the privilege of working in a charming little Italian restaurant. This place had a simple offering: water or wine. With an extensive Italian wine list, I had to learn quickly. At that point, I had no knowledge about wine, but the sheer enthusiasm of the restaurant manager rubbed off on me, and I instantly fell in love with wine.

From that moment on, my thirst for wine knowledge became insatiable. I embarked on a continuous journey of studying and exploring the world of wine. After spending several years in Copenhagen, I decided to venture to Melbourne, where I had the opportunity to work extensively with local wines. This experience opened my eyes to new horizons and broadened my understanding of different wine regions and styles. 


My journey and passion for wine

For nearly four years, I have been a part of the team at restaurant Wils, a place I helped to open. We achieved our first Michelin star within a year, and it has been an incredible experience building our wine list and sharing my passion with our guests and my colleagues. Currently, my focus is pursuing the prestigious Master of Wine qualification, held by only three individuals in the Netherlands and achieved by just 500 people worldwide in its 70-year history. Learning about wine is a lifelong pursuit that never ceases to inspire me.
